Many of you have asked how that little ebook I was working on is coming along. Thank you for being interested - it's coming! It will be released this Spring and I'll tell you all about it as we get closer, but today I wanted to share a similar (yet different) ebook with you. You may remember my friend and I were unknowingly writing about the same subject, at the same time. What are the odds? It must be a worthy topic! We believe so. ;)
For today... I'd like to share Renee's fantastically delicious ebook with you.

Eat This :: Meal Salads & Whole Food Dressings would make the perfect addition to your recipe/cookbook collection. Perhaps you've already seen it or own a copy?
In this book, Renee shares her family's story of eating large meal-sized salads (just about) every single day. You will be inspired! She also shares simple ways to build a great salad as well as delicious recipes for whole food dressings (and a few other recipes too).
These are not the meal-sized salads you may be thinking of. You know the kind, the type you find in chain restaurants that are really just vehicles for shredded cheese, low quality meat, and unhealthy dressings. That's not the type of salad this book is about.
The way Renee does meal-sized salads in her home is by concentrating on nutrient dense plant food ingredients, right down to the dressing recipes. Perhaps most especially the dressing recipes.
Dressings are nutritious? Yes! More so than you might realize.
In addition to large dinner size plates filled with greens, vegetables of all kinds, beans, nuts and seeds (those last three are important for a hearty plant based meal salad), Renee's family tops their salad with simply prepared, whole food dressings.
Moms and dads who are looking for a way to sneak in extra nutrition, this is the perfect way to do it. Thankfully, to help us out with that, Renee has made whole food dressings the basis of the recipe section in her book.
Six wonderful recipes for whole food dressings that will surprise you! Leaving out the usual dressing fillers such as vegetable oils; Renee uses ingredients like almond milk, miso, tahini, nuts, seeds, fresh herbs, and nut butters in her recipes. Dense nutrition in every bite.
If your kids are not big salad eaters yet, do try these dressing recipes as "dips" for fresh veggies and such. Put a little spread out on the kitchen table one Saturday afternoon and watch what happens. Little hands will reach and dip away. (Flax crackers are fun for dipping too!)
The photos in this post are of the Cowboy Cashew {Ranch Inspired} Dressing (recipe is found in the book). Oh my, you will want to run to your pantry and whip up this recipe just as soon as you can. So delicious, it will make you happy!
You can hop on over to Renee's shop and pick up your own copy (don't you love how ebooks are so affordably priced), or you can enter your name in the comments of this post to try and win one of five copies! Of course, you can also pick up a copy for yourself in the shop and gift one copy to a friend, should you be a lucky winner.

If you'd prefer to just enter the giveaway, Renee is offering FIVE COPIES of her book, Eat This :: Meal Salads & Whole Food Dressings, to my readers!
Simply leave a comment below and we'll be sure to include you in the drawing. Comments will be closed and winner announced on Monday.
Thanks, Renee! And good luck everyone!
